Carrot gratin

Gratins in general are a very popular French preparation and they also happen to be a fantastic way to introduce more vegetables into your diet. With this recipe we really wanted to challenge the popular belief that carrots are nothing more than a boring sweet vegetable, and we did this by turning them into the most amazing and savoury carrot gratin. Whether you are a massive fan of carrots or not, if you enjoy the pleasure that comes from eating healthy and tasty foods, we strongly recommend you give this preparation a go and we promise that you won’t be disappointed.

Ingredients[ ounces / grams ]
600gcarrots, cooked
100gbéchamel sauce
30gtomato sauce
4 halvessun-dried tomatoes (8-10g)
salt
chili powder
parsley
breadcrumbs
21ozcarrots, cooked
½ cupbéchamel sauce (8oz)
2 tbsptomato sauce (1oz)
4 halvessun-dried tomatoes (0.5oz)
salt
chili powder
parsley
breadcrumbs
Instructions
  1. Finely chop the dehydrated tomatoes and the parsley.
  2. Grate the carrots into a bowl, add in the vegan béchamel and mix the ingredients well. As soon as the ingredients are properly combined, add in chilli powder, the tomatoes, the parsley and a generous pinch of salt, and stir well to obtain the final mixture.
  3. Pour the mixture into an oven dish of the desired dimension and level it down. To obtain a more appealing look, texturise the surface of the gratin with a spatula, and add some coarse breadcrumbs on the surface for a little bit of crunch.
  4. Place the gratin under the grill and cook it for about 10 minutes or until slightly browned. The ingredients are all pre-cooked so the gratin needs very little extra cooking.
