Green beans go with so many foods, which is just as well in the summer months where they are coming out of our ears and growing in the garden like triffids. For centuries, the Italians have prepared green beans with tomato sauce and so we are sharing this preparation method with you. It doesn’t involve any fancy preparation techniques, so you can throw it all in a pan and let the ingredients work their magic. We think they look gorgeous too, and believe us, they taste even better than they look. The tomato accompaniment is perfect if you’re in need of a break from those plain boiled beans. We think you’ll taste the summer sun in every bite, even on a cold, drizzly day.
7ozgreen beans
2ozred onions (1 small)
1 clovegarlic
½ cuptomato sauce
¾ cupvegetable stock (or water)
1½ tspmirin (optional)
1½ tspsoy sauce
salt (to taste)
black pepper (to taste)
chili (to taste)
Instructions
- Cut the beans into pieces and finely dice the garlic and the onions.
- Place a pan over a high heat, add in the liquid ingredients, and then, add in the beans, the tomato sauce, the onions and the garlic. Stir the ingredients well to combine them and bring the liquid to the boil.
- Once the sauce starts boiling, lower the heat to the minimum, cover the pan with the lid and cook the beans for 10 minutes. The liquid should simmer for the duration of cooking time.
- Once the time has elapsed, remove the lid, give the ingredients a good stir, put the lid back on and cook the beans for another 10 to 15 minutes to complete the dish. Before serving, remember to taste the beans and adjust salt if needed.
