There are days when we like to play with scales and very precise measurements, and other days when we really feel that intuitive cooking is the way to get things done. During one of those intuitive days, we managed to discover an amazing flavour combination that is able to turn dates and apricots into the most amazing raw apricot jam. Don’t think even for a second that mixing these two ingredients is going to result in a bland tasting final spread, because the reality couldn’t be more different, far from it.
- Pit the dates, grate the zest of a quarter grapefruit, chop the apricots and add all the ingredients into the food processor.
- Blitz the ingredients until they are slightly combined to complete the jam.
