Romesco sauce

This sauce is the quintessence of Catalan cuisine. Romesco is the kind of preparation that goes well with any kind of savoury food, but it is also so good that I wouldn’t mind eating it with a spoon straight from the container. If you’ve never tried this delicacy before and you are passionate about rich and tasty sauces, then giving this preparation a go seems to be just the right step to take.

Ingredients[ ounces / grams ]
4ggranulated sugar
3gsalt
4gsweet paprika
1 pinchblack pepper
20groasted almonds
½ clovegarlic
20gtomato concentrate
15grosted tomatoes
15groasted bell peppers
30gwater
15gcider vinegar
70gsiken tofu
1 tspgranulated sugar
½ tspsalt
1½ tspsweet paprika
1 pinchblack pepper
0.7ozroasted almonds
½ clovegarlic
0.7oztomato concentrate
0.5ozrosted tomatoes
0.5ozroasted bell peppers
2 tbspwater
1 tbspcider vinegar
2.5ozsiken tofu
Instructions
  1. Place all the ingredients into a container and blend them thoroughly to obtain the final sauce.
Substitutions and Tips
  • If the roasted tomatoes and almonds are not available, or simply not desired, increase the quantity of tomato concentrate to 50g/1.8oz in total.
