This was a real discovery for me. Could this possibly be the best vegan milk ever invented? I don’t know about that, but I can definitely say that it is the one I prefer over all the others available. This drink, apart from being raw, has a very complex and nutty aroma and a very beautiful sweet taste, and that is without adding any sugar to it. To cut a long story short, this milk is good, really good! Time for you to find some tigernuts (also known as chufa) and give this preparation a go. My guess? You’ll love it!
Instructions
- Thoroughly wash the tigernuts, place them into a bowl, cover them with plenty of cold water and let them soak for 18 to 24 hours.
- Once the time has elapsed, drain the Tigernuts, tip them into the jug of a blender, add the water of the recipe into the jug and blend the ingredients at high speed for 2 minutes to complete the process.
- Strain the obtained liquid using a wet muslin cloth or a nut milk bag to obtain the final milk.
Substitutions and Tips
- Horchata is best served chilled, with ice, sugar to taste (if desired) and a pinch cinnamon. Another interesting addition lime zest; add a strip of it to the serving glass before pouring the milk into it and the drink will turn into a custard-like flavoured liquid.
